Fines are used in the brewing industry but it is also used to refer to milled flour.
From a private communication with Paul Cannon, "For an image of Belben Steam Flour Mills, Poole see The Mills Archive, (at bottom of page). I believe the terms 'pastry' and 'fines' do refer to different types of flour."
